Instructions
  1. Slice the Eggplant into 1/2-inch thick rounds.
  2. In a shallow dish, combine the Flour, Salt, and Black Pepper.
  3. Dredge each Eggplant slice in the flour mixture, ensuring it's fully coated.
  4. Heat the Vegetable Oil in a large skillet over medium-high heat.
  5. Fry the Eggplant slices for 3-4 minutes per side, until golden brown and crispy. Remove and place on a paper towel-lined plate.
  6. In a small bowl, combine the Pizza Sauce, Dried Oregano, and Garlic Powder.
  7. Spread a layer of Sauce on each fried Eggplant slice.
  8. Sprinkle with Mozzarella Cheese and top with Pepperoni.
  9. Bake in a preheated oven at 375°F (190°C) for 5-7 minutes, or until the cheese is melted and bubbly.
