Instructions
- Slice the Eggplant into 1/2-inch thick rounds.
- In a shallow dish, combine the Flour, Salt, and Black Pepper.
- Dredge each Eggplant slice in the flour mixture, ensuring it's fully coated.
- Heat the Vegetable Oil in a large skillet over medium-high heat.
- Fry the Eggplant slices for 3-4 minutes per side, until golden brown and crispy. Remove and place on a paper towel-lined plate.
- In a small bowl, combine the Pizza Sauce, Dried Oregano, and Garlic Powder.
- Spread a layer of Sauce on each fried Eggplant slice.
- Sprinkle with Mozzarella Cheese and top with Pepperoni.
- Bake in a preheated oven at 375°F (190°C) for 5-7 minutes, or until the cheese is melted and bubbly.
