Instructions
Slice the Eggplant into 1/2-inch thick rounds.
In a shallow dish, combine the Parmesan Cheese, Flour, Garlic Powder, and Italian Seasoning.
Dredge each Eggplant slice in the parmesan mixture, ensuring it's fully coated.
Heat the Vegetable Oil in a large skillet over medium-high heat.
Fry the Eggplant slices for 3-4 minutes per side, until golden brown and crispy. Remove and place on a paper towel-lined plate.
While the eggplant fries, make the Sauce: Heat the Olive Oil in a saucepan over medium heat. Add the Garlic and cook for 1 minute. Add the Crushed Tomatoes, Sugar, and Red Pepper Flakes. Simmer for 15 minutes, stirring occasionally.
Spread a layer of Sauce on each fried Eggplant slice.
Top with Fresh Mozzarella slices.
Bake in a preheated oven at 375°F (190°C) for 5-7 minutes, or until the cheese is melted and bubbly.
