Instructions
  1. Slice the Eggplant into 1/2-inch thick rounds.
  2. In a shallow dish, combine the Parmesan Cheese, Flour, Garlic Powder, and Italian Seasoning.
  3. Dredge each Eggplant slice in the parmesan mixture, ensuring it's fully coated.
  4. Heat the Vegetable Oil in a large skillet over medium-high heat.
  5. Fry the Eggplant slices for 3-4 minutes per side, until golden brown and crispy. Remove and place on a paper towel-lined plate.
  6. While the eggplant fries, make the Sauce: Heat the Olive Oil in a saucepan over medium heat. Add the Garlic and cook for 1 minute. Add the Crushed Tomatoes, Sugar, and Red Pepper Flakes. Simmer for 15 minutes, stirring occasionally.
  7. Spread a layer of Sauce on each fried Eggplant slice.
  8. Top with Fresh Mozzarella slices.
  9. Bake in a preheated oven at 375°F (190°C) for 5-7 minutes, or until the cheese is melted and bubbly.
  10. Garnish with Fresh Basil before serving.
