Instructions
Prepare the Raspberry Coulis: In a blender, combine the Fresh raspberries, Powdered sugar, and Lemon juice. Blend until smooth. Strain through a fine-mesh sieve to remove seeds. Set aside.
Prepare the Coating: In three separate shallow dishes, place the All-purpose flour, the beaten Egg, and the Panko breadcrumbs mixed with Heavy cream and Orange zest.
Coat the Ice Cream Sandwiches: Dredge each Ice cream sandwich in the Flour, then dip in the Egg, and finally coat thoroughly with the Panko mixture.
Fry the Sandwiches: Heat the Peanut oil in a deep fryer or large pot to 350°F (175°C). Carefully lower the coated Ice cream sandwiches into the hot oil. Fry for 30-45 seconds, until golden brown and crispy. Be careful not to overcrowd the fryer.
Serve Immediately: Remove the fried Ice cream sandwiches from the oil and place them on a plate lined with paper towels to drain excess oil. Drizzle with Raspberry Coulis, dust with Powdered sugar, and garnish with Fresh mint sprigs. Serve immediately.
