Instructions
  1. Prepare the Pasta Dough: Combine the 00 Flour and Salt. Create a well and add the Egg yolks and Olive oil. Mix and knead for 10 minutes until smooth. Rest for 1 hour.
  2. Make the Hazelnut Praline: Combine the Sugar and Hazelnuts in a saucepan over medium heat. Cook, stirring constantly, until the sugar melts and caramelizes. Pour onto a parchment-lined sheet and let cool completely. Roughly chop.
  3. Prepare the Filling: Combine the Nutella and ground Hazelnuts.
  4. Roll out the Pasta Dough very thinly. Cut into 2-inch squares. Place 1 teaspoon of Filling in the center of each square. Seal and shape into ravioli.
  5. Heat the Grapeseed oil to 350°F (175°C). Fry the ravioli in batches until golden and crispy.
  6. Drain on paper towels.
  7. Plate the ravioli. Drizzle with Aged balsamic glaze. Sprinkle with chopped Hazelnut Praline. Garnish with Edible gold leaf.
