Instructions
To make the Pasta Dough, combine the Flour and Salt in a bowl. Create a well in the center and add the Eggs and Olive oil. Mix until a dough forms. Knead for 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.
While the dough rests, prepare the Filling by combining the Nutella and chopped Hazelnuts in a bowl.
Roll out the Pasta Dough thinly using a pasta machine or rolling pin. Cut into 3-inch squares.
Place 1 teaspoon of Filling in the center of each square. Moisten the edges with water and fold over to form a triangle, pressing firmly to seal.
Heat the Peanut oil in a medium saucepan over medium-high heat until it reaches 350°F (175°C).
Fry the ravioli in batches for 2-3 minutes per side, or until golden brown.
Drain on paper towels.
Combine the Powdered sugar and Vanilla bean seeds in a small bowl. Dust the fried ravioli with the Vanilla Bean Sugar before serving.
