Instructions
In a large skillet, brown the Ground beef over medium-high heat. Drain off any excess grease.
Add the diced tomatoes, kidney beans, black beans, chili powder, cumin, smoked paprika, garlic powder, cayenne pepper, salt, and pepper to the skillet. Bring to a simmer and cook for 20 minutes, stirring occasionally.
While the chili simmers, prepare the Cheese Sauce: In a saucepan, melt the Butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in the Milk until smooth. Bring to a simmer, stirring constantly, and cook until thickened, about 5 minutes. Remove from heat and stir in the cheddar cheese until melted.
Open each bag of Fritos lengthwise. Carefully pour about 1/4 of the Chili into each bag.
Drizzle with Cheese Sauce, then top with diced onion and pickled jalapeños.
