Frozen Greek Yogurt Cookie Sandwiches
A slightly more refined version with a hint of fresh berries swirled into the Greek yogurt filling. Uses higher-quality cookies.

Chocolate Wafer Cookies
1 1/2 cups
Plain Whole Milk Greek Yogurt
1/4 cup
Maple Syrup
1 tsp
Vanilla Bean Paste
1/2 cup
Mixed Berries (strawberries, blueberries, raspberries)
A slightly more refined version with a hint of fresh berries swirled into the Greek yogurt filling. Uses higher-quality cookies.
Instructions
- Gently fold the Mixed Berries into the Plain Whole Milk Greek Yogurt, Maple Syrup, and Vanilla Bean Paste in a medium bowl.
- Lay out 6 cookies on a parchment-lined baking sheet.
- Spread approximately 2 tablespoons of the Greek yogurt mixture onto each cookie.
- Top with the remaining 6 cookies to create sandwiches.
- Freeze for at least 1 hour, or until solid.
- Remove from freezer and enjoy immediately.
