Preheat oven to 400°F (200°C).
To roast garlic: Cut the top off the head of garlic, drizzle with Olive oil, wrap in foil, and bake for 45-60 minutes, or until soft and caramelized.
Let the roasted garlic cool slightly, then squeeze out the cloves.
In a bowl, combine all Garlic Butter ingredients until well blended.
Slice the Sourdough bread in half lengthwise.
Spread the Garlic Butter evenly over the cut sides of the bread.
Bake for 10-12 minutes, or until golden brown and bubbly.
Slice and serve immediately.
