Instructions
  1. Preheat oven to 400°F (200°C).
  2. Pat the Chicken dry with paper towels. Rub with Olive Oil, Smoked Paprika, Salt, and Black Pepper.
  3. In a small bowl, combine all Sauce ingredients. Mix well.
  4. Loosen the skin of the chicken breast and rub half of the Sauce mixture under the skin. Rub the remaining Sauce all over the outside of the chicken.
  5. Place Potatoes and Carrots in the bottom of a roasting pan. Place the chicken on top of the vegetables.
  6. Roast for 80-90 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh and the vegetables are tender.
  7. Let the chicken rest for 10 minutes before carving and serving.
