Instructions
- Preheat oven to 400°F (200°C).
- Pat the Chicken dry with paper towels. Rub with Olive Oil, Smoked Paprika, Salt, and Black Pepper.
- In a small bowl, combine all Sauce ingredients. Mix well.
- Loosen the skin of the chicken breast and rub half of the Sauce mixture under the skin. Rub the remaining Sauce all over the outside of the chicken.
- Place Potatoes and Carrots in the bottom of a roasting pan. Place the chicken on top of the vegetables.
- Roast for 80-90 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh and the vegetables are tender.
- Let the chicken rest for 10 minutes before carving and serving.
