Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine Potatoes with Olive Oil, Garlic, Rosemary, Thyme, Oregano, Salt, and Pepper.
  3. Toss to coat potatoes evenly with the Seasoning.
  4. Spread potatoes in a single layer on a baking sheet.
  5. Roast for 30-40 minutes, flipping halfway through, until golden brown and tender.
  6. Remove from oven and sprinkle with Parmesan Cheese. Return to oven for 5 minutes, or until cheese is melted and lightly browned.
