Instructions
  1. Preheat oven to 400°F (200°C).
  2. Roast the whole head of Garlic: Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and bake for 45-60 minutes, or until soft.
  3. Let the roasted garlic cool, then squeeze out the cloves into a small bowl.
  4. In a small bowl, mash the roasted garlic with the melted Butter, Rosemary, Thyme, and Red Pepper Flakes.
  5. If using homemade dough, prepare according to recipe. If using store-bought, let it rest at room temperature for 30 minutes.
  6. Roll the Dough into a long rope, about 1 inch thick.
  7. Cut the rope into 12 equal pieces.
  8. Tie each piece into a knot.
  9. Place the knots on a baking sheet lined with parchment paper.
  10. Brush the knots generously with the Roasted Garlic Butter mixture.
  11. Sprinkle with Pecorino Romano Cheese.
  12. Bake for 12-15 minutes, or until golden brown.
  13. Serve warm.
