Equipment: Large pot, Small saucepan, Potato ricer or potato masher, Colander, Sauté pan Shop these items →
Instructions
  1. Place Potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.
  2. While Potatoes are cooking, melt Butter in a small saucepan over medium heat. Continue cooking until Butter turns golden brown and has a nutty aroma. Set aside.
  3. Drain Potatoes and return them to the pot.
  4. Sauté Garlic in a separate pan with a little butter until fragrant, about 1 minute. Add to the Potatoes.
  5. Add Dairy ingredients (Heavy Cream and Mascarpone Cheese) and browned Butter to the pot.
  6. Mash Potatoes with a potato ricer or potato masher until extremely smooth and creamy.
  7. Stir in Truffle Oil, Sea Salt, and White Pepper. Adjust seasoning to taste.
  8. Garnish with chopped Chives before serving.
