Instructions
  1. In a bowl, toss the Chicken with the Marinade ingredients and potato starch. Let marinate for at least 30 minutes, or up to 2 hours.
  2. In a separate bowl, whisk together all Sauce ingredients.
  3. Heat 2 tbsp Avocado oil in a carbon steel wok or large skillet over high heat until smoking slightly. Add the chicken and stir-fry quickly until browned and almost cooked through, about 4-5 minutes. Remove chicken and set aside.
  4. Add the remaining 1 tbsp Avocado oil and Toasted Sesame oil to the wok. Add the Red onion, Shiitake mushrooms, and Red bell pepper and stir-fry for 2-3 minutes until slightly softened.
  5. Add the Broccolini and Sugar snap peas and continue to stir-fry for another 1-2 minutes.
  6. Pour the Sauce over the vegetables and bring to a simmer. Cook for 1-2 minutes, stirring constantly.
  7. Stir in the potato starch slurry and cook until the sauce thickens, about 30 seconds.
  8. Return the cooked chicken to the wok and toss to coat with the sauce. Serve immediately, garnished with Toasted sesame seeds and Green onions.
