Instructions
  1. Preheat oven to 325°F (160°C).
  2. Pat the Prime Rib Roast dry with paper towels.
  3. In a small bowl, combine Olive Oil, Kosher Salt, Black Pepper, Garlic Powder, and Dried Thyme.
  4. Rub the mixture all over the Prime Rib Roast.
  5. Place the roast on a roasting rack in a roasting pan.
  6. Roast for approximately 3-3.5 hours, or until a meat thermometer inserted into the thickest part registers 130-135°F (54-57°C) for medium-rare.
  7. Let the roast rest for 15-20 minutes before carving.
  8. While the roast is resting, prepare the Horseradish Cream: In a medium bowl, combine Sour Cream, Prepared Horseradish, Lemon Juice, Salt, and Black Pepper. Mix well.
  9. Carve the Prime Rib Roast and serve with the Horseradish Cream.
