Instructions
Cook Lentils: Combine Lentils and Water in a pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender. Drain any excess water and set aside.
Sauté Vegetables: In a large skillet, cook Sausage over medium heat, breaking it up with a spoon, until browned. Remove sausage and set aside. Add Onion, Carrots, and Celery to the skillet and cook until softened, about 5-7 minutes. Add Garlic and cook for another minute.
Combine Ingredients: In a large bowl, combine cooked Lentils, cooked Sausage, sautéed Vegetables, Breadcrumbs, Egg, Italian Seasoning, Salt, and Pepper. Mix well.
Shape and Bake: Transfer the mixture to a greased loaf pan. In a small bowl, whisk together Ketchup and Brown Sugar to make the Glaze. Spread the Glaze evenly over the top of the loaf.
Bake: Bake in a preheated oven at 350°F (175°C) for 60-70 minutes, or until the loaf is firm and the glaze is bubbly.
