Instructions
Cook Lentils: Combine Lentils and Chicken Broth in a pot. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender but still hold their shape. Drain any excess liquid and set aside.
Sauté Vegetables: In a large skillet, cook Sausage over medium heat, breaking it up with a spoon, until browned. Remove sausage and set aside. Add Onion, Carrots, and Celery to the skillet and cook until softened, about 8-10 minutes. Add Garlic and Mushrooms and cook for another 3-5 minutes, until mushrooms are tender.
Combine Ingredients: In a large bowl, combine cooked Lentils, cooked Sausage, sautéed Vegetables, Panko Breadcrumbs, Eggs, Italian Seasoning, Smoked Paprika, Salt, and Pepper. Mix well.
Shape and Bake: Transfer the mixture to a greased loaf pan. In a small bowl, whisk together Tomato Paste, Maple Syrup, and Balsamic Vinegar to make the Glaze. Spread the Glaze evenly over the top of the loaf.
Bake: Bake in a preheated oven at 375°F (190°C) for 65-75 minutes, or until the loaf is firm and the glaze is caramelized.
