Instructions
  1. Brown the Butter: In a saucepan over medium heat, melt the Butter. Continue cooking, swirling occasionally, until the butter turns golden brown and has a nutty aroma. Remove from heat and let cool slightly.
  2. Cream together the browned Butter and Caster Sugar until light and fluffy.
  3. Gradually add the Cognac, beating well after each addition. Ensure the mixture remains emulsified.
  4. Stir in the Vanilla Bean Paste, Fleur de Sel, and Nutmeg.
  5. Continue to beat for 3-5 minutes until the sauce is exceptionally smooth and airy.
  6. Serve immediately or store in the refrigerator for up to 2 days. Allow to come to room temperature before serving and re-whip if necessary.
