Instructions
Preheat oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish.
Prepare the Saffron Beurre Blanc: In a saucepan, reduce White Wine and Shallots over medium heat until almost dry. Add Heavy Cream and Saffron Threads. Simmer for 5 minutes.
Reduce heat to low and whisk in cold Butter, one cube at a time, until emulsified and sauce is smooth and glossy. Season with Fleur de Sel and White Pepper.
Blanch Artichoke Hearts in boiling salted water for 3-4 minutes until tender-crisp. Drain well.
Arrange Artichoke Hearts and Oysters in the prepared baking dish.
Pour the Saffron Beurre Blanc evenly over the Oysters and Artichoke Hearts.
Prepare the Gratin Topping: In a small bowl, combine Panko Breadcrumbs, Parmesan Cheese, and Chives.
Sprinkle the Gratin Topping over the gratin.
Bake for 15-20 minutes, or until golden brown and bubbly. Serve immediately.
