Instructions
  1. Prepare the Crust: In a large bowl, whisk together the All-Purpose Flour, Almond Flour, Granulated Sugar, and Salt. Cut in the Cold Unsalted Butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add the Ice Water, one tablespoon at a time, mixing until the dough just comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 45 minutes.
  3. Prepare the Filling: In a large bowl, gently combine the Blackberries, Granulated Sugar, Almond Extract, Lemon Juice, Orange Zest, and Almond Flour.
  4. Preheat oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough into a 12-inch circle.
  5. Transfer the dough to a baking sheet lined with parchment paper. Pour the Filling into the center of the dough, leaving a 2-inch border.
  6. Fold the edges of the dough over the filling, pleating as you go. In a small bowl, whisk together the Egg Yolk and Heavy Cream to create the Egg Wash. Brush the crust with the Egg Wash.
  7. Sprinkle the crust with Sliced Almonds and Demerara Sugar. Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
