Instructions
Heat Olive Oil in a heavy-bottomed pot over medium heat. Add Shallot and Ginger and cook until softened, about 5 minutes.
Add Green Tomatoes and Peaches to the pot and cook for another 5 minutes, stirring occasionally.
Combine all Brine and Spices ingredients in a small bowl. Pour over the tomato and peach mixture.
Bring to a simmer, then reduce heat to low and cook for 60-75 minutes, stirring frequently, until the chutney has thickened and the fruit is tender.
Let cool slightly before serving. Can be stored in sterilized jars in the refrigerator for up to 2 weeks.
