Green Tomato Relish
A more complex relish with a hint of spice and depth, using a blend of vinegars and fresh herbs.

Green Tomatoes-chopped

Yellow Onion-finely chopped
1/2 cup
Red Bell Pepper-finely chopped

A more complex relish with a hint of spice and depth, using a blend of vinegars and fresh herbs.
Instructions
- Combine all Tomatoes and Vegetables ingredients in a large bowl.
- In a saucepan, combine all Brine ingredients and bring to a boil, stirring until sugar is dissolved.
- Pour the hot brine mixture over the tomato and vegetable mixture. Let stand for 30 minutes.
- Transfer the mixture to a large pot and bring to a boil. Reduce heat and simmer for 45 minutes, stirring occasionally.
- Stir in the Fresh Dill during the last 5 minutes of simmering.
- Ladle hot relish into sterilized jars, leaving 1/2 inch headspace. Process in a boiling water bath for 10 minutes.
