2 lbs Green Tomatoes-chopped
1 Yellow Onion-finely chopped
1/2 cup Red Bell Pepper-finely chopped
2 cloves Garlic-minced
1/4 cup Vinegar-apple cider

Instructions
  1. Combine all Tomatoes and Vegetables ingredients in a large bowl.
  2. In a saucepan, combine all Brine ingredients and bring to a boil, stirring until sugar is dissolved.
  3. Pour the hot brine mixture over the tomato and vegetable mixture. Let stand for 30 minutes.
  4. Transfer the mixture to a large pot and bring to a boil. Reduce heat and simmer for 45 minutes, stirring occasionally.
  5. Stir in the Fresh Dill during the last 5 minutes of simmering.
  6. Ladle hot relish into sterilized jars, leaving 1/2 inch headspace. Process in a boiling water bath for 10 minutes.
