Caramelize Onions: In a small skillet, melt 1 tbsp of Truffle Butter over medium heat. Add Yellow Onion and cook, stirring occasionally, for 20-25 minutes, or until deeply golden brown and caramelized. Stir in Brown Sugar and Balsamic Vinegar during the last 5 minutes of cooking.
Spread remaining Truffle Butter on one side of each slice of Brioche Bread.
Place one slice of Bread, butter-side down, in a cold skillet.
Top with Gruyere Cheese and Caramelized Onions.
Place the second slice of Bread on top, butter-side up.
Cook over medium-low heat for 4-6 minutes per side, or until golden brown and the cheese is melted and gooey.
