Instructions
- Combine guava and water in a large pot. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the guava is soft.
- Strain the guava mixture through a cheesecloth-lined sieve or jelly bag. Discard the solids and reserve the juice.
- Measure the guava juice. For every cup of juice, add one cup of sugar to the pot.
- Add the lemon juice to the pot.
- Bring the mixture to a boil over medium-high heat, stirring constantly, until it reaches the jelly stage (220°F or 104°C on a candy thermometer).
- Remove from heat and skim off any foam from the surface.
- Pour the jelly into sterilized jars, leaving 1/4 inch headspace.
- Process in a boiling water bath for 10 minutes to seal.
