Instructions
  1. Combine guava and water in a large pot. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the guava is soft.
  2. Strain the guava mixture through a cheesecloth-lined sieve or jelly bag. Discard the solids and reserve the juice.
  3. Measure the guava juice. For every cup of juice, add one cup of sugar to the pot.
  4. Add the lemon juice to the pot.
  5. Bring the mixture to a boil over medium-high heat, stirring constantly, until it reaches the jelly stage (220°F or 104°C on a candy thermometer).
  6. Remove from heat and skim off any foam from the surface.
  7. Pour the jelly into sterilized jars, leaving 1/4 inch headspace.
  8. Process in a boiling water bath for 10 minutes to seal.
