In a large bowl, gently combine all Beef with all Seasoning.
Divide the beef mixture into 8 equal portions. Flatten 4 portions into patties.
Place 2 slices of Pepper Jack cheese on top of each flattened patty. Top with the remaining 4 patties and seal the edges tightly to enclose the cheese.
Melt Butter in a skillet over medium heat. Add Yellow onion and cook, stirring occasionally, until caramelized (about 20-25 minutes). Stir in Brown sugar during the last 5 minutes.
Preheat grill or skillet to medium-high heat.
Cook patties for 5-6 minutes per side, or until cooked through and cheese is melted.
Toast Brioche hamburger buns lightly.
Assemble burgers with Lettuce, Caramelized Onions, and Mayonnaise.
