Instructions
Cook Rice: Rinse rice until water runs clear. Combine rice and water in a rice cooker or saucepan, bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until all water is absorbed. Fluff with a rice paddle and gently fold in Rice vinegar, Sugar, Salt, and Black sesame seeds. Allow to cool slightly.
Prepare Spam: Slice Spam into 12 equal slices, about 1/4 inch thick.
Make Glaze: In a small saucepan, combine Soy sauce, Brown sugar, Mirin, Ginger, and Sake. Bring to a simmer over medium heat, stirring until sugar is dissolved. Reduce heat to low and simmer for 5 minutes, or until slightly thickened.
Cook Spam: Heat a cast iron skillet over medium-high heat. Add Spam slices and cook for 2-3 minutes per side, brushing generously with Glaze during the last minute of cooking, until caramelized.
Assemble Sliders: Cut nori sheets into strips to wrap around the rice. Place a portion of rice onto each slider bun, wrap with nori, and top with a slice of glazed Spam. Sprinkle with Toasted sesame seeds and garnish with Scallions. Serve immediately.
