Instructions
Brine the Chicken: Combine all Brine ingredients in a large container. Add the Chicken and refrigerate for at least 4 hours, or up to overnight.
Remove the Chicken from the brine and pat completely dry.
Preheat oven to 350°F (175°C).
Arrange the Chicken in a single layer on a wire rack set over a baking sheet.
Bake for 45 minutes, flipping halfway through.
While the Chicken is baking, prepare the Sauce: In a saucepan, reduce the Bourbon over medium heat until it is almost dry (about 5-7 minutes).
Add the BBQ Sauce, Honey, Apple Cider Vinegar, Smoked Paprika, and Garlic to the saucepan. Bring to a simmer and cook for 10 minutes, stirring occasionally.
Whisk in the Butter until melted and smooth.
Remove the Chicken from the oven and transfer to a large bowl.
Pour the Sauce over the Chicken and toss to coat evenly.
Return the Chicken to the baking sheet and bake for another 10-15 minutes, or until the sauce is sticky and caramelized.
Garnish with freshly chopped Chives before serving.
