Instructions
  1. Preheat oven to 400°F (200°C). Toss Broccoli with 1 tbsp olive oil, salt, and pepper. Roast for 10-12 minutes, until slightly tender.
  2. Prepare Lemon Aioli: In a small bowl, whisk together Mayonnaise, Lemon juice, and Garlic-minced. Set aside.
  3. Prepare Hot Honey: In a small saucepan, combine Local wildflower honey, Gochujang, Rice vinegar, and Smoked paprika. Simmer over low heat for 5 minutes, stirring occasionally. Let cool.
  4. Prepare Tempura Batter: In a medium bowl, whisk together Cake flour, Cornstarch, Baking powder, and Salt. Gently whisk in Ice-cold sparkling water and Egg yolk until just combined. Do not overmix.
  5. Heat Peanut oil in a deep fryer or large pot to 350°F (175°C).
  6. Dip each roasted Broccoli floret into the Tempura Batter, ensuring it's lightly coated.
  7. Fry the battered Broccoli in batches for 1-2 minutes, until golden and crispy.
  8. Remove the Broccoli from the oil and place on a wire rack to drain.
  9. Drizzle the Hot Honey over the fried Broccoli.
  10. Sprinkle with Gruyère cheese, grated and serve immediately with Lemon Aioli.
