Instructions
  1. Combine Buttermilk, Pickle brine, Salt, and Black pepper in a large bowl. Marinate the Chicken for at least 4 hours, or preferably overnight.
  2. In a separate bowl, combine all Breading ingredients.
  3. Remove chicken pieces from the brine, letting excess drip off. Dredge each piece in the Breading mixture, ensuring it's fully coated.
  4. Heat Peanut oil in a large, heavy-bottomed pot or deep fryer to 350°F (175°C).
  5. Carefully add chicken pieces to the hot oil, ensuring not to overcrowd the pot. Fry for 7-9 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F/74°C).
  6. While chicken is frying, prepare the Sauce by combining Honey, Hot sauce, Apple cider vinegar, and Lemon juice in a small saucepan. Heat over medium heat, stirring until well combined. Remove from heat.
  7. Remove fried chicken from the oil and place on a wire rack to drain excess oil.
  8. Toss the fried chicken in the Sauce until evenly coated. Serve immediately.
