Combine all Infused Honey ingredients in a small saucepan. Bring to a simmer over medium-low heat and cook for 5 minutes, stirring occasionally. Remove from heat and let steep for 10 minutes. Strain through a fine-mesh sieve, discarding solids.
In a stand mixer fitted with the whisk attachment, whip the Skyr and Heavy Cream on medium-high speed until light and fluffy, about 5-7 minutes.
Gradually drizzle in the strained Infused Honey while continuing to whip until fully incorporated.
Gently fold in Smoked Paprika and Lemon Juice.
Taste and adjust seasoning with Maldon Sea Salt.
Serve immediately or chill for at least 30 minutes to allow flavors to meld. Garnish with a sprinkle of Smoked Paprika before serving.
