Prepare the Red Wine Jus: Melt butter in a saucepan over medium heat. Add shallots and cook until softened, about 5 minutes. Deglaze the pan with red wine and reduce by half. Add beef stock and balsamic vinegar. Simmer for 20-25 minutes, or until reduced to a sauce-like consistency.
Make the Horseradish Gremolata: In a small bowl, combine mayonnaise, horseradish, parsley, and lemon zest. Mix well.
Preheat oven to 350°F (175°C).
Slice brioche rolls in half and lightly toast.
Layer Prime Rib onto the bottom halves of the rolls.
Spoon a generous amount of Red Wine Jus over the prime rib.
Spread Horseradish Gremolata on the top halves of the rolls.
Place sandwiches in the preheated oven for 5 minutes, or until heated through.
Serve immediately with extra Red Wine Jus for dipping.
