An enhanced hot roast beef sandwich featuring sweet and savory caramelized onions and a richer au jus. This version adds a layer of depth and flavor without being overly complex.

Prepare the Caramelized Onions: Melt butter in a large skillet over medium-low heat. Add onions and cook, stirring occasionally, for 30-40 minutes, or until deeply golden brown and caramelized. Stir in brown sugar and thyme during the last 5 minutes of cooking.
Prepare the Au Jus: In a saucepan, combine all Au Jus ingredients. Bring to a simmer and reduce slightly, about 10 minutes.
Make the Horseradish Cream: In a small bowl, combine sour cream, horseradish, and chives. Mix well.
Preheat oven to 350°F (175°C).
Slice ciabatta rolls in half and place on a baking sheet.
Layer Roast Beef and Caramelized Onions onto the bottom halves of the rolls.
Spoon a generous amount of Au Jus over the roast beef and onions.
Spread Horseradish Cream on the top halves of the rolls.
Place sandwiches in the preheated oven for 5-10 minutes, or until heated through.
Serve immediately with extra Au Jus for dipping.
