1/2 cup All-purpose flour
1 tsp Baking powder
1/2 tsp Baking soda

Instructions
  1. In a large bowl, combine all Dry Ingredients.
  2. In a separate bowl, whisk together all Wet Ingredients.
  3. Add the Sweet onion and Fresh chives and parsley to the Wet Ingredients and stir to combine.
  4. Pour the Wet Ingredients into the Dry Ingredients and stir until just combined. Do not overmix.
  5. Heat about 2 inches of Canola oil in a deep fryer or large pot to 350°F (175°C).
  6. Drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot.
  7. Fry for 2-3 minutes per side, or until golden brown and crispy.
  8. Remove the hush puppies with a slotted spoon and place them on a paper towel-lined plate to drain.
  9. Serve immediately.
