Ice Cube Tray Omelet Bites

Fluffy omelet bites with fresh herbs and a blend of cheeses, baked in an ice cube tray for portion control.
Instructions
- Preheat oven to 350°F (175°C). Grease a standard ice cube tray.
- In a bowl, whisk together all Eggs and Milk until well combined.
- Stir in the Gruyere Cheese, Monterey Jack Cheese, Diced Red Bell Pepper, and Diced Green Onion.
- Add the Chopped Fresh Chives and Chopped Fresh Parsley.
- Season with Salt, Black Pepper, and Nutmeg.
- Pour the egg mixture into the greased ice cube tray, filling each cube about 3/4 full.
- Bake for 18-22 minutes, or until the egg bites are set and lightly golden.
- Let cool slightly before removing from the tray. Use a knife to gently loosen the edges if needed.
