Instructions
Prepare the Fruit Compote: Combine all Fruit Compote ingredients in a saucepan. Cook over medium heat for 10-15 minutes, or until the fruit has softened and the sauce has thickened.
In a large bowl, whisk together all Dry Ingredients.
In a separate bowl, combine all Wet Ingredients.
Pour the Wet Ingredients into the Dry Ingredients and stir until just combined. Do not overmix.
Heat a lightly oiled griddle or frying pan over medium heat.
Pour 1/4 cup of batter onto the hot griddle for each pancake.
Cook for 3-4 minutes per side, or until golden brown and cooked through.
Top with the Fruit Compote and a dollop of Mascarpone Cream.
