Instructions
  1. Prepare the Fruit Compote: Combine all Fruit Compote ingredients in a saucepan. Cook over medium heat for 10-15 minutes, or until the fruit has softened and the sauce has thickened.
  2. In a large bowl, whisk together all Dry Ingredients.
  3. In a separate bowl, combine all Wet Ingredients.
  4. Pour the Wet Ingredients into the Dry Ingredients and stir until just combined. Do not overmix.
  5. Heat a lightly oiled griddle or frying pan over medium heat.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook for 3-4 minutes per side, or until golden brown and cooked through.
  8. Top with the Fruit Compote and a dollop of Mascarpone Cream.
  9. Serve immediately with Maple Syrup.
