Preheat oven to 400°F (200°C). Roast red pepper until skin is blackened. Place in a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel and slice.
In a small bowl, combine all Dressing ingredients and whisk until well combined.
Cut the Ciabatta bread lengthwise. Remove some of the bread from the inside to create space for the filling.
Layer the Meat evenly over the bottom half of the bread. Top with Provolone cheese.
Drizzle half of the Dressing over the cheese.
Add the Roasted red pepper, Romaine lettuce, Tomato, Red onion, and Pepperoncini on top of the dressing.
Drizzle the remaining Dressing over the vegetables.
Place the top half of the bread over the filling. Press down gently.
Cut the grinder into desired portions and serve immediately.
