Instructions
  1. Preheat oven to 375°F (190°C).
  2. Cut the zucchini in half lengthwise and scoop out the flesh, leaving a 1/4-inch border. Set aside.
  3. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Add ground turkey to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  5. Stir in Italian seasoning, salt, and pepper.
  6. Spoon the turkey mixture into the zucchini boats.
  7. Place the filled zucchini boats in a baking dish. Top with marinara sauce and mozzarella cheese.
  8. Bake for 25-30 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
  9. Let cool slightly before serving.
