Instructions
- Preheat oven to 375°F (190°C).
- Cut the zucchini in half lengthwise and scoop out the flesh, leaving a 1/4-inch border. Set aside.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Add ground turkey to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess grease.
- Stir in Italian seasoning, salt, and pepper.
- Spoon the turkey mixture into the zucchini boats.
- Place the filled zucchini boats in a baking dish. Top with marinara sauce and mozzarella cheese.
- Bake for 25-30 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
- Let cool slightly before serving.
