Instructions
- Prepare the Waffles: In a large bowl, whisk together the Cake flour, Sugar, Baking powder, Baking soda, and Salt.
- In a separate bowl, whisk together the Buttermilk, Egg yolk, and Melted butter. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Preheat your waffle iron and cook waffles according to the manufacturer's instructions. Set aside.
- Prepare the Filling: In a skillet, cook the Mexican chorizo over medium heat until browned and cooked through. Drain off any excess grease. In a medium bowl, combine the cooked chorizo, softened Cream cheese, Shredded Pepper Jack cheese, Diced jalapeños, Cooked bacon, and Smoked paprika. Mix well.
- Prepare the Chipotle Crema: In a small bowl, combine the Sour cream, minced Chipotle pepper in adobo sauce, Adobo sauce, and Lime juice. Mix well.
- Assemble the Wraps: Spread a generous amount of the Filling onto each waffle. Roll up the waffle tightly.
- Serve immediately with the Chipotle Crema for dipping.
