Prepare the Waffles: In a large bowl, whisk together the All-purpose flour, Sugar, Baking powder, and Salt.
In a separate bowl, whisk together the Buttermilk, Egg, and Melted butter. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
Preheat your waffle iron and cook waffles according to the manufacturer's instructions. Set aside.
Prepare the Filling: In a medium bowl, combine the softened Cream cheese, Shredded sharp cheddar cheese, Shredded Monterey Jack cheese, Diced jalapeños, Cooked bacon, Smoked paprika, Garlic powder, Salt, and Pepper. Mix well.
Assemble the Wraps: Spread a generous amount of the Filling onto each waffle. Roll up the waffle tightly.
