2 lbs Ripe Tomatoes
1 tbsp Olive Oil
1/2 cup Vegetable Broth
1 tbsp Sherry Wine
1 tsp Worcestershire Sauce

A slightly more sophisticated take on the classic, using fresh tomatoes and a touch of sherry.
Instructions
  1. Core and roughly chop Tomatoes. Heat Olive Oil in a saucepan over medium heat. Add Tomatoes and cook until softened, about 10 minutes.
  2. Add Vegetable Broth and simmer for another 5 minutes. Puree the mixture using an immersion blender or transfer to a regular blender. Strain through a fine-mesh sieve to remove seeds and skins.
  3. Return the strained tomato puree to the saucepan. Stir in Sherry, Worcestershire Sauce, and White Pepper.
  4. In a small bowl, sprinkle Gelatin over Cold Water. Let stand for 5 minutes to soften.
  5. Add the softened Gelatin to the warm Tomato Soup and stir until completely dissolved.
  6. Stir in Celery, Red Bell Pepper, Red Onion, and Sweet Pickle Relish.
  7. Pour the mixture into a mold or individual serving dishes.
  8. Refrigerate for at least 4 hours, or until firm.
  9. Garnish with Chives before serving.
