  1. Prepare the Fries: Preheat oven to 400°F (200°C). Toss the Fries with avocado oil, sea salt, and smoked paprika. Spread in a single layer on a baking sheet and bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  2. Make the Gravy: In a medium saucepan, melt the Butter over medium heat. Whisk in the All-Purpose Flour and cook for 1-2 minutes, creating a roux.
  3. Deglaze the pan with Red Wine, scraping up any browned bits. Gradually whisk in the Beef Broth, ensuring no lumps form. Bring to a simmer, then add the Worcestershire Sauce, Garlic Powder, and Thyme. Season with Salt and Pepper to taste. Simmer for 10-15 minutes, or until thickened.
