Instructions
  1. Preheat oven to 350°F (175°C). Season Chicken thighs with smoked paprika, salt, and pepper.
  2. Bake or grill chicken until cooked through, about 25-30 minutes. Let cool slightly and shred.
  3. In a saucepan, melt Butter over medium heat. Whisk in flour and cook for 1-2 minutes to create a roux.
  4. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly.
  5. Add Sherry and simmer for 5-7 minutes, or until sauce has thickened. Stir in Gruyere cheese, Parmesan cheese, Dijon mustard, and Cayenne pepper.
  6. Slice Brioche slider buns in half. Layer shredded Chicken on the bottom halves of the buns.
  7. Pour Sauce over the Chicken. Top with Bacon and Gruyere cheese.
  8. Place the top halves of the buns on top. Bake for 10-15 minutes, or until cheese is melted and bubbly.
