Instructions
  1. In a large bowl, combine the Noodles ingredients (flour, water, and salt). Knead for 8-10 minutes until a smooth dough forms. Cover and let rest for at least 30 minutes.
  2. While the dough rests, prepare the Broth. In a large pot, combine the beef broth, soy sauce, sesame oil, ginger, and scallions. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Divide the dough into 4 equal portions. Roll each portion into a long rope, about 1 inch thick. Flatten the rope slightly, then cut into strips about 1/2 inch wide.
  4. Stretch and pull each strip of dough into long noodles. If the dough resists stretching, let it rest for a few minutes before continuing.
  5. Bring a large pot of water to a boil. Cook the noodles for 2-3 minutes, or until they float to the surface and are cooked through. Drain well.
  6. Divide the noodles among bowls. Ladle the hot Broth over the noodles. Top with sliced beef, cilantro, sliced scallions, and chili oil from the Toppings.
