Instructions
- In a large bowl, combine the Noodles ingredients (flour, water, and salt). Knead for 8-10 minutes until a smooth dough forms. Cover and let rest for at least 30 minutes.
- While the dough rests, prepare the Broth. In a large pot, combine the beef broth, soy sauce, sesame oil, ginger, and scallions. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Divide the dough into 4 equal portions. Roll each portion into a long rope, about 1 inch thick. Flatten the rope slightly, then cut into strips about 1/2 inch wide.
- Stretch and pull each strip of dough into long noodles. If the dough resists stretching, let it rest for a few minutes before continuing.
- Bring a large pot of water to a boil. Cook the noodles for 2-3 minutes, or until they float to the surface and are cooked through. Drain well.
- Divide the noodles among bowls. Ladle the hot Broth over the noodles. Top with sliced beef, cilantro, sliced scallions, and chili oil from the Toppings.
