A more flavorful version of Lazy Lasagna Soup with added vegetables and a touch of creaminess.
Instructions
- In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Drain off any excess grease.
- Add the Onion, Carrots, and Celery to the pot and cook until softened, about 7 minutes.
- Add the Garlic and cook for 1 minute more.
- Stir in the Crushed tomatoes, Tomato sauce, Italian seasoning, Dried oregano, Salt, Pepper, and Red pepper flakes. Bring to a simmer.
- Add the Beef broth and Ditalini pasta. Cook until the pasta is tender, about 12-15 minutes.
- Stir in the Spinach and cook until wilted, about 2 minutes.
- Remove from heat. Stir in the Ricotta cheese, Parmesan cheese, and Heavy cream. Serve immediately.
