A refined version of classic lefse, using cultured butter for a richer flavor and demerara sugar for a delightful crunch. The dough includes a touch of nutmeg for warmth.
Combine all Lefse Dough ingredients in a large bowl and mix until a smooth dough forms. Adjust flour as needed.
Divide the dough into 8 equal pieces. Roll each piece into a thin circle, about 8-10 inches in diameter, on a lightly floured surface.
Heat a large, flat griddle or frying pan over medium heat. Cook each lefse for 2-3 minutes per side, or until lightly golden brown and slightly crispy.
Remove from the griddle and immediately spread with softened Cultured butter. Sprinkle generously with Demerara sugar.
Fold in half, then in half again, and serve warm.
