Instructions
- Preheat oven to 425°F (220°C).
- In a small bowl, combine all Marinade ingredients.
- Pat the chicken dry with paper towels.
- Rub the marinade all over the chicken, including under the skin of the breast.
- Stuff the cavity of the chicken with the lemon halves, quartered onion, and crushed garlic cloves.
- Place the chicken in a roasting pan.
- Roast for 60-70 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C).
- Let the chicken rest for 10 minutes before carving and serving.
