  1. Preheat oven to 425°F (220°C).
  2. In a small bowl, combine all Marinade ingredients.
  3. Pat the chicken dry with paper towels.
  4. Rub the marinade all over the chicken, including under the skin of the breast.
  5. Stuff the cavity of the chicken with the lemon halves, quartered onion, and crushed garlic cloves.
  6. Place the chicken in a roasting pan.
  7. Roast for 60-70 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C).
  8. Let the chicken rest for 10 minutes before carving and serving.
