Instructions
  1. In the bowl of a stand mixer fitted with the dough hook, combine Bread Flour, Sugar, Yeast, and Salt.
  2. Add Egg Yolks, cold Butter, and Milk. Knead on low speed for 8-10 minutes, until a smooth and elastic dough forms.
  3. Place the dough in a greased bowl, turning to coat. Cover and let rise in a cool place (refrigerator) for at least 4 hours, or preferably overnight.
  4. Gently roll out the dough to 1/2 inch thickness. Use a donut cutter to cut out donuts.
  5. Place donuts on a parchment-lined baking sheet and let rise for another 60-90 minutes, until puffy.
  6. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry donuts for 90-120 seconds per side, until golden brown.
  7. Remove donuts from oil and place on a wire rack to cool.
  8. While donuts are cooling, prepare the Lemon Glaze. Whisk together all Lemon Glaze ingredients until smooth and silky.
  9. Dip cooled donuts into the glaze and place on a wire rack to set.
