Lemon Glazed Donuts

Luxurious brioche donuts infused with the delicate flavor of Meyer lemons and a silky smooth glaze.
Instructions
- In the bowl of a stand mixer fitted with the dough hook, combine Bread Flour, Sugar, Yeast, and Salt.
- Add Egg Yolks, cold Butter, and Milk. Knead on low speed for 8-10 minutes, until a smooth and elastic dough forms.
- Place the dough in a greased bowl, turning to coat. Cover and let rise in a cool place (refrigerator) for at least 4 hours, or preferably overnight.
- Gently roll out the dough to 1/2 inch thickness. Use a donut cutter to cut out donuts.
- Place donuts on a parchment-lined baking sheet and let rise for another 60-90 minutes, until puffy.
- Heat oil in a deep fryer or large pot to 350°F (175°C). Fry donuts for 90-120 seconds per side, until golden brown.
- Remove donuts from oil and place on a wire rack to cool.
- While donuts are cooling, prepare the Lemon Glaze. Whisk together all Lemon Glaze ingredients until smooth and silky.
- Dip cooled donuts into the glaze and place on a wire rack to set.
