Preheat oven to 400°F (200°C).
Pat the Chicken dry with paper towels.
In a small bowl, combine all Herb Mixture ingredients.
Rub the Herb Mixture all over the Chicken, including under the skin of the breast.
Season the Chicken with Salt and Pepper.
Place the Potatoes, Onion, and Carrots in the bottom of a roasting pan.
Place the Chicken on top of the vegetables.
Roast for 75-90 minutes, or until the internal temperature of the Chicken reaches 165°F (74°C).
Let rest for 10 minutes before carving and serving.
