Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine all Marinade ingredients.
  3. Rub the Chicken with the marinade, ensuring it's well coated. Let marinate for at least 30 minutes.
  4. Toss the Vegetables with 1 tbsp olive oil, salt, and pepper.
  5. Place the Vegetables in a baking dish and arrange the Chicken on top.
  6. Roast for 50-60 minutes, or until the Chicken is cooked through and the Vegetables are tender.
  7. Let rest for 10 minutes before serving.
