Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine all Marinade ingredients.
- Rub the Chicken with the marinade, ensuring it's well coated. Let marinate for at least 30 minutes.
- Toss the Vegetables with 1 tbsp olive oil, salt, and pepper.
- Place the Vegetables in a baking dish and arrange the Chicken on top.
- Roast for 50-60 minutes, or until the Chicken is cooked through and the Vegetables are tender.
- Let rest for 10 minutes before serving.
