1.5 pounds Yukon Gold Potatoes-shredded
1/2 medium Shallot-finely minced
3 tbsp Duck Fat
1 tsp Fresh Thyme-chopped

Instructions
  1. To make the Rösti, squeeze excess moisture from the shredded Potatoes using a clean kitchen towel.
  2. In a bowl, combine shredded Potatoes, minced Shallot, Fresh Thyme, Salt, and White Pepper. Mix well.
  3. Heat 2 tbsp Duck Fat in a large skillet over medium heat. Form the potato mixture into two large patties and cook for 8-10 minutes per side, until golden brown and crispy. Remove from skillet and keep warm.
  4. Add remaining 1 tbsp Duck Fat to the skillet. Add sliced Duck Liver Mush and cook for 5-7 minutes, flipping occasionally, until heated through and slightly crispy.
  5. Crumble the Rösti patties over the Duck Liver Mush. Drizzle with Balsamic Glaze.
  6. Serve immediately.
